Our favorite taco salad has so much healthy goodness, but the kicker is the dressing.
Ingredients:
2 boneless chicken breasts (or 1 1/2 c rotisserie chicken)
2 romaine hearts, chopped
1 c cherry tomatoes, halved
1 avocado, peeled pitted, and diced
1 can black beans
1 c cheddar (or mexican blend) cheese
4 oz tortilla chips
Dressing:
1/2 t blended chipotle chilis in paste (Dump the whole can in your blender and blend. Keep in the fridge for continued use.)
1/4 c cilantro, chopped
1/4 t cayenne pepper
2 T lime juice
1 t cumin
1 c plain yogurt
Mix ingredients and toss with dressing to taste. Or keep ingredients separate as you serve for picky littles.
